John’s “Canlis” Salad recipe

The authentic Canlis salad is a not-to-be-missed dish when dining at the Canlis Restaurant in Seattle. Inspired by the original, we have made our own version that we now make at home and everyone loves it!

Ingredients Needed:

CANLIS SALAD:

2 heads of Romaine lettuce or 2 boxes of pre-washed romaine

1 bunch of scallions chopped

1/2 cup chopped fresh mint

3 tablespoons chopped fresh oregano

1 package of Nueske’s nitrate-free bacon (cooked crispy and crumbled)

1 basket of small grape tomatoes (optional)

1 cup of coarsely shredded romano cheese

DRESSING:

2/3 cup virgin olive oil 

⅓  cup fresh squeezed lemon juice

4 shakes of fresh black pepper


Directions

Clean and separate the romaine leaves in large bowl. Combine all ingredients except bacon, add dressing and toss. Then add the bacon and toss again. If someone is vegetarian, serve them first before you toss in the bacon. 

Serves 6
